Bacon Wrapped Stuffed Chicken Breast | Slimming World Friendly

An easy to make, tasty, stuffed chicken breast that's Slimming World Friendly. 

I had some bacon medallions, and I had some chicken breasts. I really fancied making myself a Hunters Chicken, but didn't have all the ingredients required. 

I looked in my fridge, and this is the dish that I created with the ingredients I already had in. I was so pleased with how it came out, I thought that it would be a recipe worth sharing!

I wasn't actually expecting that I would be sharing it on here, which is why there is only 1 photo!

I served it with super creamy garlic mash, broccoli and mushrooms.

Write Out a Budget (or Use an App)


The majority of households do not operate using a budget, which is a problem as you cannot be sure where your money is going every month. Many young people are now using budgeting apps to keep track of their financial situation. However, if you still prefer to do things the old-fashioned way, you can always write out your expenditures. You may find that you are shocked by how much you are paying for your daily coffee or twice weekly takeaway. Learn to Save 


One of the best budgeting tips that we can provide is to learn to save. In the past few years, this has become something of a lost art form as there are so many ways of accessing instant money. While credit cards and loans aren’t a bad thing in of themselves, you need to ensure that you have a clear strategy for paying them back. When you have an unnecessary but desired personal purchase that you would like to make, it is a great habit to learn to save up for it rather than buying it instantly. After all, this is what we all used to do when we were kids and would save up our pocket money! 


Shop with a List and Cook 


The ready availability of food made to order has driven out cooking in a big way. However, rediscovering this lost art is always going to have a positive impact on your budget. First and foremost, when you go to the supermarket, you should do so with a list. This way, you are not going to be tempted into buying anything that you do not need, which can easily happen when you shop whilst hungry. Then, you should learn to cook a couple of simple dishes. Over time, you can start to add more and more to your repertoire until you have reached the stage where you have enough to sustain yourself for each and every week. This way, food made to order can become a luxury like it was always supposed to be! 

There is a lot to say about budgeting when you are young, but these three tips will certainly stand you in good stead. So, now is a great opportunity to put them all into practice to see what a difference they could make to your financial health.

Chicken & Bacon Risotto Recipe Slimming World Friendly, low calorie meals, low calorie recipe, low calorie dinner

 A creamy and delicious Slimming World friendly risotto recipe! A delicious recipe that's perfect for calorie counting or low-calorie meals. 

I love a good risotto, and once I learnt how to make one properly, there's not looking back!

With risotto, you can add in or remove as many flavours as you like. This is chicken, bacon and mushroom, but you could leave the meat out to make this vegetarian if required. 

This slimming friendly version is syn free, simple to make, and very tasty!


My Tips for the best risotto

1. Choose arborio rice. This will absorb the stock well, giving you that lovely thick, velvety texture.

2. Do not wash your rice before you use it. This removes the starch, which is actually required to help create a smooth texture. 

3. Cook your risotto on a low, simmering heat and add the stock gradually, one ladle at a time. This gives the rice time to fully absorb the liquid and flavours.

4. Don't rush! Rushing your risotto will only ruin its texture. 

5. Keep your attention fully on your risotto, and don’t let it simmer unattended. Check and stir often to prevent it from drying out or sticking to the bottom of the pan.

Jambalaya Soup

This soup has all the yummy flavors of Jambalaya in one big bowl of soup! Bell peppers, celery, cauliflower rice, diced tomatoes, shrimp and chicken sausage are all simmered together to make this a hearty nutritious soup!


I love jambalaya and ate it often while growing up in Louisiana during my elementary school years when my Dad was stationed at an Air Force Base in Alexandria, LA! I mostly remember it containing rice, but this dish still satisfies my craving for one of my favorite childhood dishes. This recipe uses cauliflower rice which keeps this dish low carb and less calories than a soup that uses traditional rice. Give this a try! Be warned! You may want to double the recipe because this tastes even yummier the next day as leftovers!


Jambalaya Soup

Ingredients:
1 tsp olive oil (1 Healthy Fat)
1/4 cup sweet bell pepper ~ any color, chopped (1/2 Green)
1/4 cup celery, chopped (1/2 Green)
1 link of Al Fresco andouille chicken sausage, thinly sliced (1/2 Lean)
1/2 cup Italian diced tomatoes ~ less than 5 g carbs per serving (1 Green)
1/2 cup cauliflower rice, fresh or frozen (1 Green)
1 cup lower sodium chicken broth (1 Condiment)
1/4 tsp cajun seasoning (1 Condiment)
1/4 tsp paprika (1/2 Condiment)
1/4 tsp dried oregano leaves (1/4 Condiment)
1/4 tsp dried basil (1/8 Condiment)
5 oz raw shrimp, peeled and deveined ~ should yield 3.5 oz cooked (1/2 Leanest)

Directions:
In a medium sized saucepan, heat olive oil over medium high heat. 
Saute peppers and celery until tender for about 4 to 5 min. 
Add the sausage and cook until browned for about 5 more min. 
Add diced tomatoes, cauliflower rice, chicken broth, cajun seasoning, paprika, oregano, basil and shrimp. 
Bring to a boil and then lower the temperature to medium low heat and cook for about 5 more minutes or until shrimp is cooked through and cauliflower rice is tender.

Makes 1 Serving
Each serving provides
1 Lean, 3 Greens, 3 Condiments and 1 Healthy Fat (for shrimp)

Tomato & Feta Pasta Trend Recipe | Slimming World Friendly

The TikTok & Instaram Feta Pasta Trend, made slimming friendly! 

If you have access to any social media, you will probably have seen the Feta Pasta Trend doing the rounds!

It is essentially a pasta dish created from baking cherry tomatoes, a whole block of feta, and adding some pasta. 

I have seen varying degrees of success with this online, but think I have perfected the way to get a deliciously creamy sauce, instead of lumpy feta. 

To make this dish more 'slimming friendly', I reduced the amount of olive oil used. You could cut this out entirely though if you wish, and use low calorie cooking spray instead.
