Cajun Chicken and Sausage Pasta: A Flavorful and Satisfying Dish


Cajun cuisine, originating from the southern region of Louisiana, is renowned for its bold flavors and use of aromatic spices. For the Pasta:

  • 1 pound penne pasta or your preferred pasta shape
  • 8 cups water
  • 1 tablespoon salt

For the Chicken and Sausage:

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 pound smoked sausage, sliced
  • 2 tablespoons olive oil

For the Sauce:

  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 (15 ounce) can diced tomatoes
  • 1 (15 ounce) can tomato sauce
  • 1 (10 ounce) can diced tomatoes with green chilies
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup chopped fresh parsley


Preparing the Cajun Seasoning:

  1. In a small bowl, combine all the ingredients for the Cajun seasoning. Mix well and set aside.

Cooking the Pasta:

  1. In a large pot, bring 8 cups of salted water to a boil.
  2. Add the pasta and cook according to the package instructions.
  3. Drain the pasta and set it aside.

Cooking the Chicken and Sausage:

  7. Stir in the heavy cream and parsley.

Combining the Ingredients:

  1. Add the cooked chicken and sausage back to the skillet with the sauce.
  2. Bring to a simmer and cook for 5 minutes, or until heated through.
  3. Add the cooked pasta to the skillet and stir to combine.
