Recipe Chicken Muamba

  2. Add the diced tomatoes, and red and green bell peppers to the pot. Cook until the vegetables are softened.
  3. Stir in the chicken pieces and cook until they are browned on all sides.
  4. Add the palm nut cream (Moambé sauce) and chicken broth to the pot. Stir well to combine.
  5. Mix in the peanut butter, ground coriander, ground cumin, smoked paprika, salt, and pepper. Stir until the sauce is smooth and well incorporated.
  6. Cover the pot and simmer over low heat for about 45 minutes to 1 hour, or until the chicken is cooked through and tender.
  7. Serve the Chicken Muamba hot over cooked rice or fufu.
