Recipe Percik Chicken

Ayam Percik is a traditional Malaysian dish known for its flavorful grilled chicken marinated in a blend of aromatic spices and coconut milk. This dish is perfect for gatherings, barbecues, or simply enjoying a taste of Malaysia at home. Here's how to make it:

  • 1 whole chicken, cut into pieces
  • 2 cups thick coconut milk
  • 4 tablespoons chili paste
  • 3 tablespoons tamarind paste
  • 2 tablespoons grated ginger
  • 2 tablespoons grated galangal
  • 2 tablespoons minced lemongrass
  • 4 cloves garlic, minced
  • 2 tablespoons ground coriander
  • 1 tablespoon ground cumin
  • 1 tablespoon turmeric powder
  • 2 tablespoons brown sugar
  • Salt to taste
  • Bamboo skewers (for grilling)

  1. Marinate the Chicken: In a large bowl, combine coconut milk, chili paste, tamarind paste, grated ginger, grated galangal, minced lemongrass, minced garlic, ground coriander, ground cumin, turmeric powder, brown sugar, and salt. Mix well to form a smooth marinade.

  2. Coat the Chicken: Add chicken pieces to the marinade, ensuring they are well coated. Cover the bowl and refrigerate for at least 2 hours, or preferably overnight, to allow the flavors to infuse.

  3. Skewer the Chicken: Preheat your grill to medium-high heat. Thread the marinated chicken pieces onto bamboo skewers, leaving a little space between each piece.

  4. Grill the Chicken: Place the skewers on the preheated grill and cook for about 15-20 minutes, turning occasionally, until the chicken is cooked through and slightly charred on the outside.

  5. Serve: Once cooked, remove the chicken skewers from the grill and arrange them on a serving platter. Garnish with freshly chopped cilantro and serve hot with steamed rice or your favorite side dishes.

  • For extra flavor, baste the chicken with the leftover marinade while grilling.
  • Soak bamboo skewers in water for at least 30 minutes before using to prevent them from burning on the grill.
  • Adjust the amount of chili paste according to your spice preference.
  • You can also grill the chicken indoors using a grill pan or broil it in the oven.

  • Substitute chicken with beef, lamb, or seafood for a different twist.
  • Add a squeeze of lime juice for a tangy flavor.
  • Incorporate finely chopped onions or shallots into the marinade for added texture.
