Recipes Italian Sausage and White Bean Stew

This hearty and flavorful stew is perfect for a cold winter night. The Italian sausage and white beans are simmered in a rich tomato broth, along with vegetables, herbs, and spices. The result is a delicious and comforting dish that will warm you from the inside out.

Ingredients

  • 1 pound Italian sausage, casings removed
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 (28 ounce) can diced tomatoes
  • 1 (15 ounce) can white beans, rinsed and drained
  • 1 (14.5 ounce) can chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped fresh parsley

Instructions

  1. In a large pot or Dutch oven over medium heat, brown the Italian sausage in the olive oil. Remove the sausage from the pot and set aside.
  2. Add the onion, carrots, and celery to the pot and cook until softened, about 5 minutes. Add the garlic and cook for 1 minute more.
  3. Stir in the diced tomatoes, white beans, chicken broth, oregano, basil, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 15 minutes.
  4. Add the browned Italian sausage back to the pot and simmer for 5 minutes more.
  5. Stir in the parsley and serve.

Tips

  • For a thicker stew, mash some of the white beans before adding them to the pot.
  • If you don’t have any Italian sausage, you can substitute ground beef or pork.
  • You can also add other vegetables to this stew, such as potatoes, zucchini, or bell peppers.
  • Serve this stew with a side of crusty bread or rice.
