The sweet potatoes are roasted until tender, then topped with a flavorful BBQ chicken filling. The filling is made with shredded chicken, BBQ sauce, and a variety of spices. • 4 medium sweet potatoes
  • 1 pound boneless, skinless chicken breasts
  • 1/2 cup BBQ sauce
  • 1/4 cup chopped onion
  • 1/4 cup chopped green bell pepper
  • 1/4 cup chopped red bell pepper
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup shredded cheddar cheese (optional)

  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Scrub sweet potatoes clean and prick them with a fork.
  3. Place sweet potatoes on a baking sheet and bake for 45-60 minutes, or until tender.
  4. While the sweet potatoes are baking, cook the chicken. Season the chicken breasts with salt and pepper, then grill or pan-fry them until cooked through.
  5. Shred the cooked chicken and place it in a bowl. Add the BBQ sauce, onion, green bell pepper, red bell pepper, chili powder, cumin, salt, and black pepper. Stir to combine.
  6. Once the sweet potatoes are cooked, cut them in half lengthwise. Scoop out the flesh of the sweet potatoes, leaving a 1/2-inch border around the edges.
  7. Fill the sweet potato shells with the BBQ chicken filling.
  8. Sprinkle with shredded cheddar cheese, if desired.
  9. Bake for 15-20 minutes, or until the filling is heated through and the cheese is melted.
  10. Serve immediately.

  • For a spicier filling, add more chili powder or cayenne pepper to taste.
  • If you don’t have BBQ sauce, you can use ketchup or tomato sauce instead.
  • You can also add other vegetables to the filling, such as corn, black beans, or zucchini.
  • If you are short on time, you can use pre-cooked chicken or rotisserie chicken.
  • These stuffed sweet potatoes can be made ahead of time and reheated when you are ready to serve.
